Sunny Citrus Wake Up Juice

I love my new Vitamix. It pulverizes fruits and vegetables into liquid, so that juice contains all the good fiber that would normally be extruded and discarded. That means, after a long hiatus, juice is finally back on my menu, yay! This lovely pink concoction came from a recipe I found on the Healthy Happy Life blog for “AM sunrise juice”. It came out so pretty that I didn’t have the heart to add spinach and turn it into a super-healthy green smoothie.

grapefruit smoothieMy version of this drink contained:
1 grapefruit, peeled
1/2 large honeycrisp apple
1/4 lemon, peeled
a sliver of ginger (I find the taste very strong, so I only use a little)
a small handful of baby cut carrots

Dee-lish and it had a vegetable serving to boot!

Juicing whole fruits is a lot easier in a Vitamix or other high power blender. Use caution if you’re using a standard blender so you don’t burn out the motor.

I made this recipe a second time with a slightly different recipe:

1 grapefruit, peeled
1 orange, peeled
1/2 cup crushed pineapple from a can
1/2 honeycrisp apple

This batch lasted me all day.

Fruit juices and smoothies are a great way to get lots of fruit and vegetable servings into your diet in a palatable way. Enjoy!
